Here’s another one from one of my favorite websites, RecipeTin Eats.
Growing up my mom made a delicious lentil soup. I wish I had learned how to make it. This one is very similar to my mom’s. As a nod to her, I’ll add her staple ingredient to most soups – meaty soup bones. Lentils are a great source of protein, high in fiber, low in fat, and rich in minerals.
